Fattoush Salad Recipe | Salad Week | Episode 5


Fattoush salad is a delicious mix of vegetables and a creamy, spiced sumac and tahini dressing. Add the pita chips on the side and use it to scoop up the salad.

Fattoush Salad


2 cups Lettuce

1 Cucumber

2 Tomatoes

¼ cup Parsley

¼ cup Mint

¼ cup Pomegranate

¼ cup Tahini

1 tblsp Lemon Juice

1 tblsp Sumac

½ tsp Salt

½ tsp Pepper


  1. Mix the lettuce, cucumbers, totmatoes, chickpeas, parsley and mint in a bowl.
  2. Mix the tahini, lemon juice, sumac, salt and pepper together. Thin with a bit of water.
  3. Pour in as much of the dressing as you’d like.
  4. Toss together and then serve with baked pita triangles and a scatter of pomegranate.
