These zucchini boats are the perfect weekend meal when on your keto diet. Cheesy mince is used as a stuffing for zucchini shells that are baked in chicken broth.

Stuffed Zucchini Boats

Ingredients:

3 zucchini
500 gms chicken mince
1/2 onion, chopped
1/2 cup cheese
1 tblsp ginger/garlic paste
1 tsp paprika
1/2 tsp red pepper flakes
1 tsp oregano
1 tsp salt
1 tsp pepper
1/2 cup chicken broth
1 tblsp oil

Method:

1. Halve the zucchini and remove the seeds so they form a shell for the filling.
2. Heat oil in a pan and add the ginger/garlic paste and stir-fry. Add the remaining ingredients and cook until the mince is done, about 15 minutes.
3. Stuff the zucchini boats with the mince and arrange in a baking dish.
4. Pour the broth over the zucchini and bake in a 180C for 20-25 minutes.
5. Serve!
